For 4-6 person - Preparation: 20 minutes - Cooking: 30 minutes<\/p>\n
Ingredients<\/u><\/p>\n
1 whole pumpkin peeled & diced<\/p>\n
1 big onion, peeled & sliced<\/p>\n
1 medium carrot, peeled & diced<\/p>\n
1 medium sweet potato peeled & diced<\/p>\n
1 medium potato peeled & diced<\/p>\n
2 tablespoon Extra Virgin Olive Oil<\/p>\n
1 teaspoon Sea Salt<\/p>\n
\u00bcteaspoon grounded Black Pepper<\/p>\n
1 tablespoon butter<\/p>\n
4 garlic cloves chopped<\/p>\n
1 tablespoon fresh ginger grated<\/p>\n
1 teaspoon cumin<\/p>\n
1 teaspoon coriander<\/p>\n
1 litre chicken stock<\/p>\n
1 teaspoon of honey<\/p>\n
150ml fresh cream<\/p>\n
\u00bdcup of fresh coriander chopped<\/p>\n
Pine nuts to decorate<\/p>\n

Ingredients for Ginger Cream (mix all)<\/u><\/em><\/p>\n
50ml fresh <\/em>cream<\/p>\n
3 tablespoon of milk<\/p>\n
1 tablespoon of honey<\/p>\n
2 teaspoon of freshly grated ginger<\/p>\n
A pinch of sea salt<\/p>\n

METHOD<\/u><\/p>\n
Preheat oven @ 200 degr\u00e9s.<\/p>\n
Cover a tray with baking paper<\/p>\n
Place diced pumpkin, onion, sweet potato & carrot on the tray<\/p>\n
Drizzle with olive oil, salt and pepper<\/p>\n
Mix lightly.Roast for 20 minutes until vegetables are golden<\/p>\n
While vegetables are roasting, melt butter & 1 tbsp of olive oil in a large pan, on medium heat<\/p>\n
Add crushed garlic, grated ginger, coriander & cumin<\/p>\n
Cook for a minute stirring continually<\/p>\n
Add chicken stock, potato, honey, roasted vegetables<\/p>\n
Bring to the boil, then reduce the heat to medium<\/p>\n
Gently cook uncovered for 15 to 20 minutes, until potatoes are tender<\/p>\n
Mix with a hand mixer until smooth creamy texture(this is like velvet\u2026)<\/p>\n
Season to your taste<\/p>\n
Add the fresh cream and mix again<\/p>\n
Serve with ginger cream(above), coriander freshly chopped and Pine Nuts<\/p>\n
